Zucchini & Chocolate Chip Pancakes
Pancakes that are toddler approved but with some sneaky goodness. These pancakes are fluffy, light and such a yummy breakfast or snack option for little ones. The zucchini in this recipe is virtually tasteless, its just an easy added benefit that makes these pancakes extra special.
- 1 zucchini - peeled and grated/shredded
- 1/2 cup of milk of your choice
- 1 teaspoon of apple cider vinegar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1 cup self raising flour
- 1 teaspoon baking powder
- 4 tablespoons mini chocolate chips
METHOD:
- Peel the skin off the zucchini (this will help hide the zucchini for your kids but you can opt to leave it on) then grate finely
- Add all of the ingredients (except chocolate) into a bowl with zucchini and mix well.
- Finally add the chocolate last.
- Heat a non stick pan on medium to low heat.
- Add spoonful's of the pancake mix to your hot pan, wait until the pancakes begin to bubble slightly, then flip.
- You can check your pancakes to ensure they are brown, then remove from the pan.

Notes:
- Apple Cider Vinegar is an added extra to this mix that helps make the pancakes light and fluffy
- You can also add banana to this recipe for added nutrients
- If you are making these for younger toddlers or baby's, you can leave the chocolate out and still have delicious pancakes
